Roughly 940 producers here, growing coffee on small plots of land, gather their cherries to be processed at the Buncho Washing Station. The owner of the mill, Asefa Dukamo, was introduced to coffee at a young age as his parents were cultivating coffee and other garden crops. In his teens, he began to supply neighbouring coffee washing stations with cherries purchased from nearby relatives and villagers in addition to his own family’s farm. He realized that there were not many washing stations nearby, and he had to travel great distances to deliver his coffee. Thus began the idea to construct his own washing station to reduce the travel time for coffee producers in his region. As well as coffee, producers in the region will plant other crops such as sugar-cane, a variety of fruits and “Inset”; a common indigenous plant that can be prepared as food in different forms. Income from coffee is important, but minimal for most farmers due to the small size of their farms. Within the Kiambu County is the Gichuka Coffee Factory, belonging to the Kimaratia Farmers’ Cooperative Society (FCS). In Kenya, factories are essentially wet mills and collection points for coffee. \u003c\/p\u003e\n\u003cp\u003eThe FCS was originally created by the now defunct Kiamwangi coffee group, a large cooperative in the area. Currently, the FCS manages three factories: Gichuka, Gachika, and Gitare. The Gichuka Factory was initiated in 1985, the youngest of the three. Producers deliver their cherries to the Factory that is closest to their homes.\u003c\/p\u003e\n\u003cp\u003eSituated at roughly 1,800 meters above sea level, the region where the Factory is located is defined by its bright red soils, full of rich nutrients for coffee trees. The high altitude allows for ideal temperatures and rainfall for the slow maturation of coffee cherries. The FCS is managed by seven board members, two elected in each factory, and one that floats amongst all the factories. \u003c\/p\u003e\n\u003cp\u003eAfter the producers gather their ripe cherries, they will deliver them to the Factory. Once the cherries reach the mill, the coffee is pulped to remove the external fruit from the coffee bean. The coffee is then soaked in cement tanks overnight to break down the remaining mucilage. The following morning, the coffee is cleaned once more through channels of water and dispersed on raised beds to dry in the open sun until the ideal moisture content is reached.\u003c\/p\u003e\n\u003cp\u003eThe Factory has invested in a new pulper, a recirculation system and about 20 conditioning bins to ensure efficient and uniform processing is attained to produce high quality coffee. Smallholders in this region grow coffee on small plots of land and pick the cherries during harvest to deliver to the mill.\u003c\/p\u003e\n\u003cp\u003eOnce the cherries reach the mill, the coffee is washed with local river water. After the cherries are pulped, the coffee is placed in large tanks to soak in water and ferment. This allows for the breakdown of the exterior mucilage, normally lasting overnight. The coffee is then rushed through channels and cleaned one final time before being spread evenly on raised tables to dry in the open sun until a targeted moisture content is reached.\u003cbr\u003e\u003cbr\u003eProducers and the Factory collectively value sustainability, and various projects have been enacted to reduce environmental impact. Wastewater used for processing is carefully placed into soak pits to seep back into the soil without polluting the local drinking source. In El Salvador, where more than 80% of the country’s coffee is produced under shade, this ecosystem is based mainly in the coffee forest. For this reason, coffee farms such as El Carmen play a vital role as a sanctuary for hundreds of the migratory and native bird species found in this part of the world. \u003c\/p\u003e\n\u003cp\u003eThe Estate was founded in the middle of the 19th century when Antonio José Alfaro acquired a plot of land near the vilage of Ataco – meaning ‘Site of Elevated Springs’ in the indigenous Nahuatl language – where he started to produce coffee. Afterwards, the cherries are evenly dispersed on raised beds to dry in the open sun for 25 – 30 days, with constant raking to prevent any mould development.
